If you're not making Taco Tuesday a weekly thing, we think you gotta re-evaluate your life choices stat. Ha! Just kidding - we're here to tell you though, a weekly taco night does level up the amount of fun in your life. Whether you're making them at home or you're hitting up your favorite taco spot, taco night gives you something to be excited about early in the week, and we could all use a little more of that. Whether it's a weekly night with yourself, your friends or your fam - make it a blast of a tradition, no regrets will be had! Living life like this just keeps things a little lighter.
Music To Blast On Taco Tuesday
You know that we couldn't suggest a weekly taco theme night without a playlist that is sure to inspire some asombroso (awesome) dance moves in the kitchen. These tracks are the chips to our guac...the salt to our margs - could keep going, but we'll spare you and get right to the beats.

Jenny & Kai are vegan - it's taken a bit to find taco night worthy recipes, but we've got it down ...these mouth-watering tacos find their way to our kitchen on the regular...
ps - we're chefs behind the DJ booth, not in the kitchen...modify the recipe as you love!
BASIC IMPOSSIBLE TACOS
These are SO good that Walt eats them regularly and doesn't miss the real thing at all (and he would tell us!).
Have you tried Impossible meat yet?!
Ingredients
1 package Impossible Meat
As many Violife Cheddar Shreds as you love (1-2ish cups)
Ortega Fiesta Flats (have you tried these for taco night?! Such a fun twist on the taco shell!); or your fav taco shells
1 can Black Beans
A couple tablespoons of your favorite taco seasoning (we love Old El Paso)
Whatever toppings you LOVE
Recipe
Heat your oven to 300, lay your fiesta flats out on an oven tray.
Cook the Impossible meat in a skillet per the package/as you would ground beef. Be sure it's no longer pink, then add your favorite taco seasoning to taste. Add some Violife Cheddar Shreds and let them melt. Gently stir in the black beans.
Once your cheese is melted, spoon the mix into your Fiesta Flats. Pop that tray in the oven and let everything melt into taco goodness for a couple of minutes (watch the shells to be sure they don't burn).
Once you pull them out of the oven, top these babies with your favorite toppings and dig in. SO good.
